The number of beer brewers in the UK is growing fast and so is the amount of its by-products. Spent grain is the main leftover of the beer brewing process and accounts for 85% of total by-products produced. Breweries produce millions of tons of spent grain every day that is either going to waste, or are repurposed as animal feed, compost or energy.
Recently, spent grain is being focused by food manufacturers due to its relatively high nutritional value. Spent grain can be incorporated into granola bars, biscuits or bread. Such innovations will play a major part of the food industry in future in terms of reducing food waste and contributing to a more sustainable and environmental friendly food supply chain. There are plenty of opportunities for Scottish manufacturers to invest in innovative food products containing spent grain.
